Choose Ashtanga if you want to harmonize your mind, breath and body to create a smooth and poetic daily practice where each day you follow the same sequence.  Hatha will see you hold each position (asana) a little longer, stretching a little deeper also while coordinating your movements with your breath.  The Iyengar method introduces props such as bolsters, blocks and straps to help you achieve more advanced postures.  It is possible to get the benefit from these postures before you have reached the level required to do them independently, and your Guru will be there to support you.
